Chitose (IseCity) "Ise-Udon" "Meat Ise-Udon"

Chitose

Chitose was founded in 1912 and is the inspiration for the name Ise-Udon.
It is said that the name "Ise-Udon" came about after Rokusuke Ei, who was in Ise for a performance, ate udon at this restaurant and was so impressed with the taste that he spoke about it on the radio, saying, "Ise has such good udon. If it were not for the udon from this restaurant, the name Ise-Udon might not have spread throughout the country.
The most distinctive feature of the long-established restaurant Chitose's Ise-Udon (550 yen) is its secret sauce. The soup stock is carefully prepared over two hours and left to rest for four to five hours, then the best tamari soy sauce is added and boiled down for an hour, then left to rest for another three days to allow the flavors to meld. The secret sauce, which takes time and effort to make and has been passed down from generation to generation, is the darkest among the many Ise-Udon shops. You'll be hesitant to put your chopsticks in it and say, "What!" However, when you put it in your mouth, the flavor and aroma of the soup stock spreads out, and the taste is light.
``We are confident that the taste of Ise-Udon can't be beat anywhere else!'' says the fourth generation, who has inherited the flavor from the time of its founding.
This restaurant is also the origin of Niku Ise-Udon (880 yen), which is now available at various restaurants. The menu was created at the request of a local representative who was a regular customer.

Ise-Udon no Mameya (IseCity) "Ise shrimp udon" "Tsukimi udon"

Founded in 1920. Mameya is a long-established Ise-Udon restaurant located in Chitose.
While more and more shops are having their noodles made at a noodle factory, they are particular about making their noodles in-house using Ayahikari wheat from Mie Prefecture, and only make the amount they need each day in-house. The sauce is a blend of soy sauce made from Soda skipjack tuna and Japanese horse mackerel purchased in season, along with local Mieman's tamari soy sauce to go well with the homemade noodles. It takes three hours to blend the dashi stock and soy sauce.
While preserving the basic flavor from the time of its founding, the fourth generation has taken on new challenges and devised various toppings that bring out the deliciousness of Ise-Udon.
Our top recommendation is the ``Ise shrimp udon'' menu, which we devised through trial and error, thinking, ``Since you've come all the way to Ise, we want you to enjoy all of Ise's specialties at once.'' A whole Ise lobster sits luxuriously on top of the udon noodles.

Yamaguchiya (IseCity) “Gochaise Udon”

Ise-Udon from Yamaguchiya has been loved by IseCity since the early Showa era.
We are not affiliated with a noodle shop with the same name, and only make the noodles for that day in-store every day.
The homemade noodles, which are made by adjusting the moisture and salt content depending on the temperature and humidity of the day, are highly rated. It is also very popular through mail order, receiving over 500 orders a year from all over the country.

``Kiya Shokudo'' stands alone in a residential area. Established in 1986 in search of the nostalgic taste of childhood.
The sauce, which we created by eating Ise-Udon all over IseCity, has a traditional taste. The soup is simply made with dried sardines, dried bonito flakes, and kelp, and mixed with Ise's unique tamari soy sauce and another type of soy sauce for about 2 hours. The sauce is black when it is boiled down to half its volume. The moment it came out I thought, ``It looks spicy! ” “Can you eat it?” ? ” I hesitate to put on my chopsticks. However, when you actually eat it, it is much lighter than you would expect from the appearance, and goes perfectly with the noodles.
The extra-thick noodles, which are twice as thick as regular noodles, are boiled in 100-degree water for an hour and are fluffy and soft. The filling is served in traditional bowls with vertical watermelon-like patterns, so that you can eat your fill.
Be sure to try Ise-Udon from Kiya Shokudo, which is highly praised by locals.

Ise-Udon Nakamura (IseCity) "Ise-Udon" "Ise Tamago Udon"

IseJingu Geku Nakamura is a long-established restaurant on Ise-Udon located right next to the parking lot. It was founded in 1916 in this area, where udon restaurants are said to have existed since the Edo period, taking over the business in 1916.
The rich sauce is made by carefully making dashi stock from dried sardines, dried sardines, and kelp, and simmering it with locally produced tamari soy sauce, which has a mild finish despite its color.

Fukusuke (IseCity) "Ise-Udon" "Handmade Ise-Udon"

Ise-Udon restaurant located in Okage-yokocho.
It is based on the image of Doburoku, a udon restaurant along the Ise Kaido road that was so popular during the Edo period that the saying ``If you don't eat it while you're alive, you'll die and be scolded by Enma.'' The store's name comes from the saying that it brings good luck.
There are figurines of Fukusuke in the store, and Fukusuke is also decorated on the onigawara tiles.
