The new InabeCity government building opened in May 2019, and the "Nigiwai no Mori" located right next to it. At the same time as inviting food experts who run popular restaurants from outside Mie Prefecture, the owners of each store work hand in hand with local residents to promote local production for local consumption as well as a variety of activities such as increasing the value of agriculture and food. Masu. This is a grand project that has been launched as a base for community development and human resources development through public-private collaboration, something that is rarely seen anywhere else in Japan. Since opening, the number of people has far exceeded expectations, and we have also received a number of inspections from local governments around the country.
In addition to introducing the distinctive gourmet food served at the four stores in Nigiwai no Mori, we also listened to the stories of the people who gathered in Nabenochi with great aspirations in their hearts.

Nigiwai no Mori is approximately 15 minutes by car from the Tokai Kanjo Expressway's Daian IC.

It can be reached within an hour by car from major cities in the three Tokai prefectures, including Nagoya, Gifu, TsuCity.

Currently, four stores are operating in Nigiwai no Mori: Kitsch Ebio Inabe Hutte, Rob Inabe Hutte, Mahou no Pan, and Meat Processing Shop FUCHITEI, offering attractive gourmet food that is popular outside the prefecture. doing.

Now, let's go to the unique shops run by top runners!

The popular cafe "café Rob", famous for its pancakes and tapioca drinks, has landed in Nigiwai no Mori as "Rob Inabe Hutte"!

It is also attracting attention as a place to practice cafe culture, creating new connections among the people of Inabe.

The brown sugar tapioca milk on the left (500 yen/excluding tax) is the most popular dish made with tapioca flour imported directly from Taiwan and brown sugar from Miyakojima, Okinawa. You can also order it mildly hot.

It comes with a stylish lid when you take it out.

On the right is the strawberry chocolate tapioca (650 yen/excluding tax), available only in February. You can enjoy various creative tapioca drinks depending on the season.

"kabusetea Pancake" (950 yen/excluding tax), which uses kabusetea from Inabe, is a limited menu item at "Rob Inabe Hutte".

After receiving an order, the pancakes are made with meringue and carefully baked for about 20 minutes.

The freshly made and baked pancakes are bobbing on the plate and are really fluffy!

The melt-in-your-mouth texture spreads in your mouth.

There are seven types of pancakes, and there are also seasonal pancakes whose contents change every month.

Rob’s Burger (800 yen/excluding tax). The harmonious combination of 100% beef, 120g of handmade patty, and crispy buns gives you a hearty and filling experience.

Each thick patty is slowly baked to bring out the flavor of the beef.

Cheddar cheese and bacon toppings (150 yen each/excluding tax) are also available. The illustrations on each wrapping paper are hand-drawn by the staff.

``All of our staff members try to make various prototypes and come up with a wide variety of products,'' says store manager Misaki Kawase (front).

It seems that the restaurant has been very busy ever since it opened, but things have finally calmed down a bit, so they would like to put more effort into developing new menus that use seasonal ingredients and Inabe ingredients. I did.

Yoshihiro Kano is the owner of "Mahou no Pan."

He runs ``Boufrecante'' in Mizuho Ward, Nagoya City, which sells popular breads such as white bread, which is said to be sold only by reservation, and krone, which sells several hundred pieces a day.

``I would like to take on various challenges, such as developing new breads, while incorporating ingredients grown in Nabe's naturally blessed land.'' That's what he said.

They aim to make bread that is simple but carefully selected ingredients, and that you won't get tired of eating it over and over again, without thinking about how it looks on Instagram.

French bread called "Batard" (240 yen/excluding tax). It takes about 7 hours to bake one stick.

We use only flour, salt, water, and baker's yeast without adding sugar, and by fermenting slowly, we bring out the traditional, natural sweetness and aroma.

Many people also eat Nattok with side dishes or salads as a substitute for rice.

Grape bread on the top left (half 300 yen, one 600 yen/excluding tax). The dough is sweet and the raisins are juicy, giving it a texture similar to eating real grapes.

The baked cream bread on the bottom left (150 yen/excluding tax) is a bread that is said to be good to eat even when you're full. By adding cream and baking it, it melts in your mouth and has a different texture than regular cream bread.

The cinnamon danish on the top right (190 yen/excluding tax) is popular for its simple taste, baked using only cinnamon and granulated sugar.

The black bean danish (210 yen/tax excluded) on the bottom right uses black beans grown in Tamba. Although it is heavy and filling, it has a soft sweetness that is a blend of Japanese and Western flavors, making it a popular dish among women.

The store manager, Yu Nishiyama, smiles as he holds the freshly baked signature menu item ``Magical Bread'' (500 yen per piece, excluding tax).

By blending several types of fermented seeds, the degree of ripening is increased, and you can enjoy a chewy texture in addition to a subtle sweetness.

Reservations are not accepted, and each person is limited to one loaf per transaction, making it difficult to obtain, but it seems worth it even if you wait in line to try it!

"Meat Processing Shop FUCHITEI" is a restaurant owned by French chef Takaharu Fuchi.

I closed the popular bistro I had run in Nagoya for 13 years, moved to InabeCity.

Wanting to master the charcuterie (processed meat products) that he is most interested in, he manufactures and sells sausages, patties, and terrines.

The store is equipped with an authentic wood-fired oven, and you can see the owner baking sausages and bread over a large flame.

Of course the sausage is homemade. Made from Mie Prefecture Sakura pork and natural sheep intestines, no coloring agents or binders are used.

The owner's belief is to ``use locally grown ingredients and vegetables grown without relying on pesticides or chemical fertilizers as much as possible.''

Homemade wood-grilled sausage hot dog set (1,350 yen/tax included).

The perfectly baked bread is made by Nigiwai no Moriuchi's ``Mahou no Pan.''

A hot dog that is fully cooked so that it feels piping hot when you hold it in your hand.

As soon as you take a bite, the meat juices start to overflow into your mouth. The flavor of the meat comes directly to you...this is a new texture that you've never experienced before!

Mr. Hiroshi is particular about using safe and secure materials that he has seen and is satisfied with. He wants to continue communicating the importance of food for the sake of the children who will be responsible for the future.

Also, terrine is something that they would like to put more emphasis on on the menu.

"The terrine embodies the French cuisine, which is said to be a cooking of addition. It takes a lot of time, is left to rest for days, and you don't know right away whether it's done well or not. That's what fascinates me. Someday, I'll create the ultimate terrine. I'd like to try making it,'' he concluded.

Studio 31 is located on the 1st floor of the Civic Core building, located in the lively forest.

This is an information center that introduces InabeCity 's charms, highlights, and ongoing events.

In addition, the first floor of the Civic Core building is a rest space with restrooms, nursing rooms, vending machines, etc.

Organic food, pancakes, bread, sausages...

Although each restaurant is a popular restaurant with a proven track record, they are not satisfied with the status quo and continue to take on challenges with food safety and the future of Inabe in mind.

If you go to Nigiwai no Mori, you'll be able to find some gems created by these wonderful people.

Town development and human development through food. Why not experience the special taste that is made with such dreams?
