He is a meat professional with a history of winning numerous awards at SUFFA (German International Meat Fair) and DLG (German Agricultural Industry Association Processed Food Contest).

The company has two bases, the head office in saimyoji IgaCity, which handles processed meat products, and the Iga Ueno Direct Sales Office, which handles meat and seasoned raw meat. Selected raw materials

According to Mr. Matsui, the delicious Matsusaka beef has a low melting point of fat. "If it has a low melting point in your mouth, it will have a melt-in-your-mouth texture. Even just touching it with your hands will cause the fat to melt." Matsusaka beef has a high melting point of fat, so when you put it in your mouth, it has a lumpy texture and the flavor doesn't fully spread out, so when purchasing it, they pay close attention to the fat in each individual beef.

"Coarse grinding and hand kneading method" arrived at in search of texture

How to make a hamburger steak with Matsusaka beef is very simple.

First, we grind the raw meat twice using our own mincing machine to make 4mm minced meat. The size of 4mm was decided upon after much trial and error in order to preserve the chewy texture when you put it in your mouth and allow you to fully enjoy the flavor of the beef.
