This time we visited "Matsusaka Maruyoshi". This shop is known for its signboard, which you can see as soon as you drive towards Tsu on National Route 42 from Matsusaka Station.
Because the characters written on the signboard say ``Meat inside ○'' and ``Yoshi inside ○,'' customers who visit say ``Nikumaru.'' “Nikuyoshi”? Although it is sometimes called ``Matsusaka Maruyoshi,'' its official name is ``Matsusaka Maruyoshi.'' The name comes from the word ``yoshi'' in the name of the founder, Yoshio Konohara.

It seems that the character ``Meat inside the circle'' means ``good meat.''

It took about three years from concept to delivery to customers.
After about two months of trial and error, he was able to create roast beef that was delicious even when he took it home.

Products filled with everyone's thoughts

We immediately conducted an interview at the cooking site.
This time, the people who showed me around were Mr. Nishiyama from sales and Mr. Ichikawa from sales promotion.
Although the two of them were not working with meat, they fell in love with Matsusaka Maruyoshi's passion for meat and decided to do their current jobs.
Mr. Hisada and Mr. Nakayabu, who are in charge of manufacturing Matsusaka Maruyoshi's products, were waiting for us at the cooking site.
He says he is researching every day how to make Matsusaka beef delicious.

Special Matsusaka beef thigh meat

The meat used in “Matsusaka Beef Roast Beef” is Matsusaka Beef thigh meat. Moreover, it is of the highest quality of 4th grade to 5th grade.
This is the part that allows you to enjoy the original flavor and tenderness of the meat when making roast beef.
The seasoning is simple: salt, pepper, and grated domestic garlic.
However, the seasoning was exquisitely balanced, and we were especially particular about the way it was grilled.
It took about two months to complete through trial and error.
They are very particular about the shaping of the thighs used for roast beef, and the butcher staff cuts them to ensure the shape and appearance of the finished meat.

Condensed flavor

After seasoning, put it in the steam oven.
Normal roast beef is usually grilled quickly and then boiled, but Matsusaka Maruyoshi is particular about roasting the meat slowly and carefully at a low temperature, keeping the center part of the meat at a temperature of 68 degrees Celsius.
By grilling it this way, you'll end up with roast beef that's congari on the outside and chewy on the inside.
Since it takes a long time to bake, mass production is not possible.
Once you see the fat bursting from the thigh meat cooking inside, you won't be able to stay there.
The kitchen is filled with the fragrant aroma of peach thigh meat and garlic.
It looks delicious even before making it into roast beef, but it takes a little more effort.
After putting it in a vacuum pack, boil it.
Add some heat here and it's done.

How to eat deliciously

This time's "Matsuzaka Beef Roast Beef" comes not only with roast beef, but also with soy sauce called "Ise soy sauce."
Normally, it would come with a sauce for roast beef, but the reason why I used soy sauce is because it is a remnant of the popular Matsusaka beef tataki, and soy sauce is the best way to enjoy the deliciousness of meat and garlic. is.
I used a variety of soy sauces, but apparently Ise soy sauce, made in my hometown of Mie Prefecture, went best.
I can feel the commitment here as well.
I suppressed my desire to eat it right away and took it home to try it.
